Cajun Creamy Chicken

This is a perfect crock pot simple meal that is absolutely and undoubtedly delicious. I still can’t believe how simple it was to put together.

Lightly grill some chicken legs, thighs, or breasts

In the Crock Pot

1 Cup of Water
1 cup of White Rice
1/2 cup of Ketchup
2 tablespoons of Minced Garlic
1/2 Chopped Onion
1 tbsp of Italian Seasoning
3 tbsp of Chicken Seasoning (or 3 chicken bullion cubes)
1 tbsp of Salt
1/2 Cup of Sour Cream
3 tbsp of Cajun Seasoning
1/2 cup of Flour
1 Whole Chopped Bell Pepper
Add the Grilled Chicken

Let this cook in the Crock Pot on High for about 45 minutes; add more water, and make sure the rice doesn’t stick to the bottom by mixing every 15 minutes. Although it will be ready to eat in 45 minutes, the longer it cooks, the easier the chicken will be to separate from the bone or to loosen and mix in with the delicious sauce. The longer it cooks, the more it thickens, so use your best judgement in adding water.

It seems like a lot of ingredients, but it is mostly spices and regular things found in a refrigerator. I had some left over sausage pasta sauce that I added to the crock pot, which gave it a more meaty flavor. If you eat all of the chicken and have leftover sauce, it’s real easy to turn what’s left into soup.
