Spinach Almond Muffins

This is a super easy and inexpensive way to make delicious muffins.  Instead of buying the main ingredients like flour, baking soda, and eggs, you can easily buy a $1 Jiffy Muffin box mix and add ingredients.  You can use either plain muffins or flavored muffins.  I chose banana for this one.  For a more healthy option, you can try to find wheat muffin mix.


1 Box of Jiffy Muffin Mix
Fresh Baby Spinach – Blended
Chopped Almonds or Walnuts

Just mix the muffin box, reducing the amount of water due to the consistency of the spinach.  Add Almonds or Walnuts.

Line up a muffin pan with cupcake liners and fill them halfway.  Cook at about 325 degrees for 10 minutes or until golden brown.  If you don’t have a muffin pan, you can use a small bread pan to slice and serve.

Use this idea for any boxed or packaged inexpensive item such as Rice A Roni, Pasta, Cookie or Brownie Mix.  You’re just creatively adding healthier vegetables to give it more substance, flavor, and nutrition – a Great Idea and Practice no doubt!

Jiffy Muffin Mix costs under a dollar and the Corn Muffin mix, even cheaper.  If you add main ingredients such as chicken, eggs, or a variety of vegetables, you not only stretch the recipe, but Save a Ton of Money and Time, creating something healthy and delicious.
