Wow, what a scrumptious Chicken Pasta Dish with Italian Flavor! Not only is it affordable, it is absolutely tasty with a blend of Spinach, Basil, Garlic and Tomato.
Chicken Breast(s) – more or less depending upon number served
Chopped Fresh Basil
Minced Garlic (3 pieces, finely sliced and chopped)
Can of Diced Tomatoes (use 1/2 can for 2 servings) OR 2 Roma Tomatoes
Mushrooms (a half a cup or a handful)
Fresh Spinach Leaves
Onion (Green, Red, or Yellow); use just enough careful not to overpower the other flavors
Shaved or Shredded Parmesan Cheese
Angel Hair Pasta (or Tortellini or Bowtie Pasta)
Chop the chicken into small squares and cook with chopped garlic and basil in Olive Oil until golden brown.
Boil water for Pasta with a dash of olive oil. You can add a bay leaf if you have some on hand or just boil in water.
As the pasta cooks, add Fresh Spinach Leaves, Mushrooms, and Diced Tomatoes to the Chicken. Let that cook down until the Spinach shrinks, maybe 5-7 minutes. Add Shredded or Shaved Parmesan Cheese and remove from heat.
Once the Pasta is finished, drain, rinse and mix with the chicken or serve separately and top the Pasta with the Chicken and Spinach.
What an amazing tasty and filling Italian Dish! Imagine using these ingredients along with some cream cheese as a Chicken Stuffing. I thought about using a little bit of heavy whipping cream in place of the olive oil to make it a creamy pasta dish. A guaranteed hit with your guests and served best with your favorite Wine; white or red.
I used 1 chicken breast and the ingredients and made a meal that could easily feed 4; or 2 with leftovers. This is a delicious gourmet meal on a budget.
