Basil Pesto

For a very rich and delicious pasta sauce, bread spread or dipping sauce, or even a salad dressing, this Basil Pesto is absolutely tasty.  Add it to Jiffy Muffin Mix, Pancake Mix, or Bread Mix for a flavorful bread.

2 Cups of Fresh Basil Leaves
1/4 cup of Pine Nuts
2 Garlic Cloves
Salt & Pepper
Shredded Parmesan
Olive Oil (2/3 cup or less; you can estimate and lower the amount to your liking)
Tomato (optional)

This is easiest with a Food Processor, but if you don’t have one, then simply chop the Basil, Pine Nuts, and Garlic as finely as possible; even grinding and mixing them together.  With this base, you can add it to just about anything you can think of to create a Basil rich flavor.  It was made as a Pasta Sauce, but is great as a Chicken marinade or flavoring to bake it with, or as a dipping sauce for Italian Bread, a Salad Dressing, a Bread Spread (like Garlic Bread).  It also makes for an excellent Pizza Sauce or a nice mix with Fresh Spinach.

Tastes great with a bottle of wine!  Basil is one of my most favorite spices since you can buy it and grow it in your window seal, backyard, or just buy it fresh from the store.
