Stuffed Bell Peppers

This is an easy bake meal with a few different variations.  You can choose either green, yellow, orange or red bell peppers.  I prefer a mix of all different colors for variety and taste.

You’ll want to wash and cut the bell pepper at the top; using a knife to hallow out the insides.  You can either cut the Bell Pepper in half or use the whole pepper after hallowing it out.

For the stuffing you can either use Rice cooked with a tomato meat sauce or just a plain tomato base; or you can use lean ground beef or ground turkey flavored with garlic salt, oregano, thyme, salt and pepper, and sauteed onion.  You can add vegetables to the meat mixture to make it a thicker sauce or even chicken, sausage or shellfish, depending upon your mood.

I prefer my stuffed bell peppers with a Tomato Meat/Rice combination for the best filling.

Take the prepared stuffing mixture and stuff the Bell Peppers.  Place the bell peppers in a baking dish that is lightly coated with olive oil.  Fill the baking dish with about a cup of water so the Bell Peppers don’t stick to the pan.  Cover the Bell Peppers with Cheese and Tomato Sauce and cook for about 20 minutes or until the Bell Peppers turn brownish black.

Enjoy this with some garlic bread and try other stuffing and cheese variations the next time around.  You can try a mexican style, a pizza style, a chinese rice style, a vegetable mix; whatever you wish.
