Shrimp and Sausage Jambalaya

This is an all time favorite Chicken, Shrimp and or Sausage with Rice Dish.  It’s somewhat on the spicy side, but you can control the heat by using less cajun seasoning.  I prefer to just buy a box of Uncle Ben’s Jambalya mix and add Bell Pepper, Chicken, Shrimp, and or Sausage, but you can make the season from scratch using:

Olive Oil, Cajun Season, Salt, Garlic, Chicken Broth, Bay Leaves, and Tomato Juice.  It cooks with white Rice and you complete the dish by adding a meat or shellfish.  It’s a delicious one box or hearty one bowl meal.  You can also serve it as a side dish to Fried or Baked Fish.
