My Bruschetta

I love bruschetta and all the many ways you can serve it.

Take a French Roll, cut it into small bread pieces.  You can either spread it with butter or top it with freshly chopped tomatoes, garlic, and a finely chopped basil leaf, a little bit of Parmesan or mozzarella, drizzled with olive oil, baked for a few minutes in the Toaster or Oven.

If you don’t have fresh ingredients, you can use bottled spices, canned tomatoes or any kind of shredded cheese.  It’s also great using Texas Toast.

You can add thinly sliced baked salmon, cream cheese or other spread to make it a delicious side dish or appetizer.  This is one of my favorites, sometimes a meal for me with a glass of wine.
