Chicken Soup

Such a hearty meal simmering in the crock pot!  I use a leftover whole chicken after a baked chicken night and boil it until it falls off the bone.  Separating the chicken from the bone is the hardest part, but after that, it’s just a matter of adding your favorite chopped vegetables, some chicken stock, and maybe some noodles.  Onion, Carrots, Celery, Broccoli and Noodles are the key ingredients in a Chicken Soup, but you can add whatever you like.

If you want a ‘creamy’ chicken soup, you might consider making a Chicken Gravy base to add to some Chicken Stock and vegetables in the crock pot, mixing it until it reaches the right fluffiness and flavor.  I like to add Garlic, Salt, Pepper, maybe Rosemary and Thyme to my chicken soup.

I enjoy making a Chicken Cheese Broccoli Soup where I use a milk, flour, and cheese base to create a rich, thick soup, adding Broccoli and Chicken to make it a full hearty winter meal.  Sometimes I add chopped potatoes to thicken it up.
